Asian Meatball Soup
Ingredients
* 2 quarts chicken stock
Pork Meatballs:
* 1/4 pound ground pork
* 1 tablespoon minced scallions/green onions
* 1 tablespoon soy sauce
* 1 teaspoon finely-minced ginger
* 1 teaspoon sesame oil
1 can water chestnuts chopped
3 Tablespoons fresh cilantro
Directions
Make meatballs: Combine ingredients let chill in fridge for 30min. In a pot slowly heat chicken stock to a simmer. form meatballs into 1/3-inch balls. Carefully drop meatballs into simmering stock. Cook at a low simmer, 15 minutes. Toss some chopped scallions/green onions & fresh cilantro into soup pot add carrots? snow peas? rice noodles etc adjust seasonings and serve.
