Favorite pancakes

Guilt Free Oatmeal Pancakes

2 cups rolled oats
2 cups skim milk
2 eggs lightly beaten
1/8 cup canola oil
½ to ¾ cup dried fruit such as currants, chopped dates, cranberries or
cherries (I hydrated apple slices from food storage)
chopped nuts (optional)
2 teaspoons baking powder
2 teaspoons baking soda
1 cup whole wheat flour (ww pastry flour if you have it)
2 tablespoons sugar
2 teaspoons ground cinnamon (I like extra)

Mix oats and milk in a bowl. Cover with plastic wrap and refrigerate
overnight. (I don't plan that far in advance, so I added them together
and microwaved it for a few minutes)

The next morning, preheat pancake griddle. Then stir eggs, oil, and
fruit until well blended. In another bowl mix flour, sugar, baking
soda, baking powder, and cinnamon. Add to oat mixture and mix.
Batter will be thick, spread it thin on griddle so it cooks all the
way through. Serve warm with maple syrup or fresh fruit.
